CALIFORNIA PISTACHIO SALAD
OREGANO DRESSING

6 ounces or rotini or shell macroni

2 cups fresh spinach, torn

1 cup chopped tomato

1 cup blanched peapods

1/4 cup roasted/salted California pistachios, chopped

Black pepper to taste

Oregano Dressing (recipe at right)

Cook rotini according to package directions, drain. Marinate hot rotini in Oregano Dressing. cool at room temperature. combine with spinach, tomato, peapods, pistachios and black pepper to taste. Sprinkle with Parmesan cheese. Makes eight servings.

1/4 cup oil

1/4 cup red wine vinegar

3/4 teasppon crushed oregano

1/4 teaspoon garlic powder

WHAT TO DO
Combine all ingredients in small bowl and mix until blended. Makes 1/2 cup
